Veggies Masala Macaroni Recipe – A Flavorful Indian Twist on Pasta

When it comes to pasta, everyone has their own style of preparing it. Here’s my take on this international favorite, infused with bold Indian flavors and spices. My Italian friends, please forgive me for this twist, but trust me, it’s delicious!

Ingredients:
– 2 cups macaroni or any pasta of your choice (cooked as per package instructions)
– 1 onion, finely chopped
– 1 tbsp ginger-garlic paste
– 1/2 tsp salt (adjust to taste)
– 1/2 tsp red chili flakes
– 1/2 tsp pizza seasoning (or mixed Italian herbs)
– 1/4 tsp turmeric powder
– 1/2 tsp red chili powder
– 1 cup marinara or any pasta sauce
– 1 tbsp butter
– 1/4 cup pasta water or vegetable stock
– 1/2 cup assorted veggies (cubed bell peppers, onions, sweet corn)

Instructions:

1. **Prepare the pasta**:
– Cook the pasta according to the instructions on the package. Drain and set aside. Save some pasta water for later use.

2. **Sauté the veggies**:
– In a pan, heat a little oil and add a pinch of salt. Toss in cubed onions, bell peppers (any color you prefer), and sweet corn.
– Sauté for 3-4 minutes until slightly soft but still crunchy. Set these aside.

3. **Prepare the Masala**:
– In a large pan, melt the butter and add the chopped onions. Sauté until translucent.
– Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.
– Stir in salt, red chili flakes, pizza seasoning, turmeric powder, and red chili powder. Cook this spice mix for about 2 minutes to release all the flavors.

4. **Add the sauce**:
– Pour in the marinara or pasta sauce. Cook everything together for another 3-4 minutes, letting the sauce blend well with the spices.

5. **Combine**:
– Add the cooked pasta and the sautéed veggies to the sauce. Stir gently to ensure everything is coated evenly.
– If the mixture looks too dry, add a couple of teaspoons of pasta water or vegetable stock to loosen it up and give a silky texture.

6. **Serve**:
– Mix everything well and cook for another 2 minutes. Serve hot, garnished with some extra chili flakes or herbs if desired.
