Slow Cooker Black-Eyed Peas

I like to prepare a big batch of beans ahead of time.

Simply rinse the dried black-eyed peas, place them in the slow cooker with enough water to cover them generously, add a little salt, and cook on Low for 7 hours until perfectly tender. Drain the beans and they’re ready to use in this recipe or store for later.

Ingredients

  • 2 cups cooked black-eyed peas (lobia), drained
  • 2 tablespoons oil
  • 1 large onion, finely chopped
  • 2 green chillies, sliced
  • 1 teaspoon ginger, minced
  • 3 garlic cloves, minced
  • Salt, to taste
  • ¼ teaspoon turmeric powder
  • 1 teaspoon red chilli powder (adjust to taste)
  • ¼ to ½ cup water
  • ½ teaspoon garam masala
  • Juice of ½ lemon
  • Fresh coriander leaves, chopped

Method

  1. Heat oil in a pan over medium heat.
  2. Add the chopped onions and sauté until soft and lightly golden.
  3. Stir in the green chillies, ginger, and garlic. Cook for another minute until fragrant.
  4. Add the drained black-eyed peas and mix well.
  5. Season with salt, turmeric, and red chilli powder.
  6. Pour in a little water and cook for 5–8 minutes, mashing a few beans with the back of your spoon if you prefer a creamier texture.
  7. Continue cooking until the beans reach your preferred consistency.
  8. Finish with garam masala, a squeeze of fresh lemon juice, and chopped coriander.
  9. Serve hot with buttered toast.
