Slow Cooker Black-Eyed Peas
I like to prepare a big batch of beans ahead of time.
Simply rinse the dried black-eyed peas, place them in the slow cooker with enough water to cover them generously, add a little salt, and cook on Low for 7 hours until perfectly tender. Drain the beans and they’re ready to use in this recipe or store for later.
Ingredients
- 2 cups cooked black-eyed peas (lobia), drained
- 2 tablespoons oil
- 1 large onion, finely chopped
- 2 green chillies, sliced
- 1 teaspoon ginger, minced
- 3 garlic cloves, minced
- Salt, to taste
- ¼ teaspoon turmeric powder
- 1 teaspoon red chilli powder (adjust to taste)
- ¼ to ½ cup water
- ½ teaspoon garam masala
- Juice of ½ lemon
- Fresh coriander leaves, chopped
Method
- Heat oil in a pan over medium heat.
- Add the chopped onions and sauté until soft and lightly golden.
- Stir in the green chillies, ginger, and garlic. Cook for another minute until fragrant.
- Add the drained black-eyed peas and mix well.
- Season with salt, turmeric, and red chilli powder.
- Pour in a little water and cook for 5–8 minutes, mashing a few beans with the back of your spoon if you prefer a creamier texture.
- Continue cooking until the beans reach your preferred consistency.
- Finish with garam masala, a squeeze of fresh lemon juice, and chopped coriander.
- Serve hot with buttered toast.
