Decadent Coconut Oil Brownies – Fudgy, Chewy, and Irresistible!If you’re a fan of rich, fudgy brownies with a crisp, shiny top, you’re in for a treat! These Coconut Oil Brownies bring a subtle hint of coconut, enhancing the deep chocolate flavor. They’re easy to make, and the coconut oil keeps them wonderfully moist and chewy.

Why Use Coconut Oil?
Swapping butter for coconut oil not only adds a slight tropical twist but also creates an incredibly soft and fudgy texture. Plus, it’s a great alternative for those who prefer dairy-free baking!
Ingredients:
- ½ cup coconut oil
- 1 cup semi-sweet chocolate, chopped or chocolate chips
- 2 eggs
- ½ cup brown sugar
- ½ cup white sugar
- 1 teaspoon vanilla extract
- ¾ cup all-purpose flour
- ½ teaspoon salt

Instructions:
Step 1: Melt the Chocolate
- In a small saucepan or microwave-safe bowl, warm the coconut oil slightly until it’s melted but not too hot.
- Add the chocolate to the warm oil and stir until smooth and fully melted. Set aside to cool.
Step 2: Whisk the Wet Ingredients
- In a mixing bowl, combine the eggs, brown sugar, white sugar, and vanilla extract.
- Whisk (or use a hand mixer) until the sugars dissolve and the mixture becomes slightly thick and glossy. This step is the secret to getting that shiny, crackly top!
Step 3: Combine and Mix
- Slowly pour the chocolate-coconut oil mixture into the whisked eggs and sugar, stirring continuously.
- Gently fold in the flour and salt until just combined. Do not overmix!
Step 4: Bake to Perfection
- Preheat the oven to 350°F (175°C).
- Grease and line an 8×8-inch square baking pan with parchment paper.
- Pour the brownie batter into the pan and spread it evenly.
- Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Step 5: Cool & Enjoy!
- Let the brownies cool in the pan before slicing into squares.
- Enjoy warm or at room temperature – they’re delicious either way!
