I made 8 big, fat, pillowy madeleines, dipped them in silky melted chocolate, covered them in crunchy chopped pistachios, and oh my goodness… every bite was a masterpiece. Crispy edges, a soft fluffy center, and that satisfying chocolate-pistachio finish — total bliss.

📝 Ingredients (Makes 8 big madeleines)

  • 2 large eggs (room temperature)
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 1 tbsp honey (for softness)
  • ½ cup all-purpose flour
  • ⅓ cup unsweetened cocoa powder
  • ½ tsp baking powder
  • ¼ cup melted unsalted butter (slightly cooled)
  • A pinch of salt

For dipping:

  • ½ cup melted dark chocolate (or milk chocolate)
  • ¼ cup chopped pistachios

👩‍🍳 Method

1️⃣ Prepare the batter

  1. In a bowl, whisk eggs + sugar until pale and slightly frothy.
  2. Add vanilla and honey — whisk again.
  3. Sift in flour, cocoa powder, baking powder and salt.
  4. Fold gently until combined.
  5. Pour in melted butter and mix again — don’t overbeat.

2️⃣ Chill the magic

Let the batter rest in the fridge for 20–30 minutes.
(Important step for the perfect hump!)

3️⃣ Air fryer time

  1. Grease the madeleine mold lightly.
  2. Spoon batter into each cavity — fill about ¾ full.
  3. Air fry at 170°C / 340°F for 8–10 minutes.
    The cakes should spring back when touched.

4️⃣ Chocolate + Pistachio finish

  1. Let madeleines cool completely.
  2. Dip the scalloped end in melted chocolate.
  3. Roll or sprinkle with chopped pistachios.
  4. Place on parchment until the chocolate sets.
