Angry pigeon on a rainy day – Nov 11, 2022

The day of extreme rain forecast in Chennai city and schools have been declared closed for the day. Doesn’t mean I get a day off, thank you IT industry. But during my break, also during the time the rain was taking a break caught this guy. Angry looking, but beautiful.

Chicken Salad, not any simple one but a simpler salad made using my 8yrs old kid's recipe. Yep, made for him using his instructions. It is basically baked chicken, lettuce, carrots and some onions. That's all..
Posting it in my blog as asked by him too. If you have followed me for sometime you'd know that we are 90% vegetables and fruits and the remaining only fish, prawns and chicken. I rarely cook chicken and my husband is so very ok with it. Enter the kid, although I had been giving him veggies and mostly vegan good mostly with some fish thrown in till he was 6yrs it all changed in one week. Yes, when he visited my sister's house for vacation he had tried chicken and has become a big fan. He thinks that I skipped a food group and felt so cheated 😁 Anyways, then started the chicken recipes because the kid thinks I do not know any which was why I didn't cook them for him.
So one day he found some youtube video and told I must make him a salad with fried chicken(boneless), lettuce, onions and carrots.
I marinate the chicken, bake them, cut into chunks and then simply toss them into a bowl of lettuce, shredded carrots and onion. Mint dressing is optional and he doesn't like it. Try it..

Spicy Egg Roast.. not so a pretty picture. But this simple iron pan is new, I love that it is perfect in size and very nice to use and I wanted to capture a stovetop pic of it in my daily cooking. I almost daily make these egg roast for lunch because they keep well throughout the day even if I cook early mornings on the workdays, and because they are delicious with almost any rice!!!

An enriched brioche spiced with turmeric, baked to perfection makes for the best turmeric Buns. So very easy to make, these are just perfect with savory sides like pav bhaji masala, any burji or curries. Or just with some butter. Bread made in home is always a cause to eat carbs and also the satisfaction overrides the time taken to make them. Thousands of recipes, options, mix ins to make a bread, I want to share what works for me too. Check out my turmeric Buns recipe below.. . Ingredients - 8 Buns . Bread flour - 250g Honey - 1 tbsp Instant active dry yeast - 5g(I use Weissmill brand) Salt - 1/2 tsp Egg - 1 + 1 for egg wash Milk - 100ml Unsalted butter - 75g, at room temperature Turmeric powder- 1/4 tsp(less is more) . Method 1. In a stand mixer or food processor, add all the ingredients and make a soft dough. If sticky, it's ok. Knead for 7 to 8 minutes until smooth and transfer to a buttered bowl. 2. Cover and rest of an hour until the size is doubled 3. Punch the dough down and transfer to a working board 4. Divide the dough into 8 equal portions 5. Roll them into smooth balls 6. Arrange in your baking pan with enough space to rise 7. Cover and rise for 45 minutes to an hour. Refrigerate for later baking use 8. Brush the tops with beaten eggs and bake for 20 to 25 minutes in a preheated 200°C oven 9.
