Instructions

1. Prep the Plantains

  • Peel the plantains and slice them into medium-thickness rounds (around ½ cm thick).
  • Place the slices in a bowl of water to prevent discoloration while you prepare the marinade.

2. Marinate

  • In a mixing bowl, combine turmeric powder, red chili powder, ginger-garlic paste, and salt.
  • Drain the plantain slices and add them to the bowl.
  • Toss gently until all the slices are evenly coated with the spice mix.
  • Let the marinated slices rest for 10-15 minutes for the flavors to meld.

3. Shallow Fry

  • Heat 2 tablespoons of oil in a non-stick or cast-iron pan over medium heat.
  • Arrange the marinated plantain slices in a single layer. Avoid overcrowding the pan.
  • Cook on one side for 3-4 minutes or until golden brown and crispy.
  • Flip the slices and cook the other side for another 3-4 minutes.

4. Serve

  • Remove the fried plantains from the pan and place them on a plate lined with paper towels to remove excess oil.
