This Egg, Cheese & Mint Chutney Sandwich is the perfect blend of comfort and zing, ideal for a lazy Sunday brunch or an anytime snack.

What Makes This Sandwich Special?

The secret to this sandwich is the Mint Chutney—a versatile condiment bursting with flavors. It’s not just a sandwich spread; it’s a multi-tasker that pairs beautifully with dosa, idli, or even plain rice. The creamy cheese and protein-packed eggs balance the chutney’s freshness, while grilling adds a golden, buttery crunch.

Ingredients

For the Mint Chutney:

  • 1 cup fresh mint leaves
  • ½ cup fresh coriander leaves
  • 2 tablespoons grated coconut (fresh or frozen)
  • 1 small green chili (adjust to taste)
  • 1 teaspoon tamarind extract
  • Salt to taste
  • Water (just enough to make a spreadable chutney)

For the Sandwich:

  • 4 slices of bread (white, whole grain, or sourdough work well)
  • 4 slices of cheese
  • hard-boiled eggs, sliced
  • Chili flakes, salt, and pepper (for seasoning)
  • Butter, for grilling
  • Ketchup or extra chutney, for serving

Instructions

Step 1: Make the Mint Chutney

  1. Blend all the chutney ingredients (mint leaves, coriander leaves, coconut, green chili, turmeric, salt, and water) until smooth. The chutney should be thick enough to spread on bread without dripping. Adjust salt and chili to taste.

Step 2: Assemble the Sandwich

  1. Spread a generous layer of the chutney on one side of each bread slice.
  2. Layer the ingredients on one chutneyed slice in this order:
    • A slice of cheese
    • Sliced hard-boiled eggs
    • Sprinkle with chili flakes, salt, and pepper
    • Another slice of cheese
  3. Top with another chutneyed bread slice, chutney side down.

Step 3: Grill to Perfection

  1. Heat a pan or griddle over medium heat. Add a dab of butter and let it melt.
  2. Place the sandwich on the pan and grill until golden and crisp, about 2-3 minutes per side. Press gently to ensure the cheese melts evenly.

Step 4: Serve and Enjoy

  1. Remove from the pan and let it cool for a minute before cutting into squares or triangles.
  2. Serve warm with more chutney or ketchup on the side.
