Ingredients

  • 2 cups whole milk

Method

  1. Heat the milk and cream together until hot but not boiling.
  2. In a separate bowl, whisk the egg yolks and sugar until the mixture becomes pale and creamy.
  3. Slowly pour the hot milk mixture into the egg mixture while whisking continuously.
  4. Return everything to the saucepan and cook over low heat, stirring constantly until the custard thickens enough to coat the back of a spoon.
  5. Remove from the heat and stir in the vanilla.
  6. Strain the custard through a fine sieve and chill completely, preferably overnight.
  7. Churn in your ice cream maker according to the manufacturer’s instructions until thick and creamy.
  8. Transfer to a freezer-safe container and freeze for 4–6 hours for a firmer texture.
