Sesame Brittle

Sesame Brittle: A Nutritious Treat for Festive and Winter Delights. There’s something deeply comforting about the crunch of homemade brittle, especially when it’s packed with the goodness of seeds and jaggery. This sesame brittle recipe brings together sesame seeds, sunflower seeds, and pumpkin seeds for a delightful mix of flavors, textures, and health benefits. Perfect for the colder months and festive occasions, this treat combines traditional methods with modern flair.

Why Sesame Brittle?

Sesame brittle, also known as til chikki in many regions, is a cherished snack during the winter and festive seasons. The combination of sesame seeds and jaggery is not only delicious but also packed with nutrients like calcium, iron, and antioxidants. Adding sunflower and pumpkin seeds enhances the crunch and provides additional vitamins and minerals.

Ingredients

  • ½ cup sesame seeds
  • ¼ cup sunflower seeds
  • ¼ cup pumpkin seeds
  • 2 tablespoons ghee
  • 1 cup pure powdered jaggery
  • A splash of water
  • Optional: Sliced nuts (almonds, pistachios, or cashews)

Method

  1. Toast the Seeds
Heat a dry pan over medium heat and toast the sesame, sunflower, and pumpkin seeds until they are aromatic and slightly golden. Be careful not to burn them. Set aside to cool.
  2. Prepare the Jaggery Syrup
In the same pan, add ghee, jaggery, and a splash of water. Cook over low heat, stirring constantly until the jaggery melts and forms a smooth syrup. To test readiness, drop a small amount of the syrup into cold water. If it hardens into a breakable piece, it’s ready.
  3. Combine and Spread
Quickly stir the toasted seeds into the syrup, ensuring even coating. Transfer the mixture onto a sheet of baking paper. For added flavor, sprinkle sliced nuts on top.
  4. Roll and Shape
Place another sheet of baking paper over the mixture and use a rolling pin to flatten it to your desired thinness. While still warm, cut into desired shapes—squares, rectangles, or diamonds.
  5. Cool and Store
Allow the brittle to cool completely. Once hardened, store it in an airtight container to maintain its crispness.

Tips for the Perfect Brittle

  • Keep a close eye on the jaggery syrup to prevent it from overcooking and becoming bitter.
  • Work quickly when mixing and spreading the brittle, as it hardens fast.
  • Experiment with flavors by adding a pinch of cardamom or cinnamon to the jaggery syrup.
