Ingredients

Method

  1. Prepare the Peanuts
    Roast the peanuts in a dry pan until golden and aromatic. Let them cool, then remove the skins and crush them coarsely using a rolling pin or mortar and pestle. Set aside.
  2. Make the Jaggery Syrup
    Heat a pan on low flame and add ghee, jaggery, and a splash of water. Stir continuously until the jaggery melts into a smooth syrup. To test its readiness, drop a small amount of syrup into cold water. If it hardens into a brittle piece, it’s ready.
  3. Combine the Peanuts and Syrup
    Quickly stir the crushed peanuts into the jaggery syrup, ensuring they are evenly coated.
  4. Spread and Shape
    Transfer the mixture onto a sheet of baking paper or a greased surface. Flatten it with a rolling pin to your desired thickness. If you like, sprinkle a pinch of cardamom powder over the top for added flavor.
  5. Cut and Cool
    While still warm, cut the brittle into squares, rectangles, or triangles. Let it cool completely before transferring to an airtight container.
