How to Make Crispy and Spicy Karasev at Home

If you’re craving a crunchy, spicy snack to pair with your evening tea or coffee, karasev is a perfect choice. This traditional South Indian delicacy is quick to prepare, uses simple pantry staples, and is irresistibly flavorful. Here’s my tried-and-true recipe for homemade karasev.

Ingredients

  • Gram flour (besan): 2 cups
  • Omam seeds (ajwain): 1 teaspoon
  • Salt: To taste
  • Turmeric powder: 1/4 teaspoon
  • Red chili powder: 1 teaspoon (adjust to your spice preference)
  • Freshly ground black pepper: 1 teaspoon
  • Hot oil: 1 teaspoon
  • Water: As needed for the dough
  • Oil: For deep frying

Instructions

1. Prepare the Dough

  1. In a large mixing bowl, combine the gram flour, omam seeds, salt, turmeric powder, chili powder, and ground black pepper. Mix well to evenly distribute the spices.
  2. Heat 1 teaspoon of oil until hot and pour it into the flour mixture. This step ensures crispiness in the karasev. Mix the hot oil into the flour thoroughly.
  3. Gradually add water and knead the mixture into a soft, pliable dough. Ensure it’s not too sticky or too dry.

2. Shape the Karasev

  1. Use a karasev press or a sev maker with a medium or large-holed disc. Grease the inside of the press lightly with oil.
  2. Fill the press with a portion of the dough.

3. Fry the Karasev

  1. Heat oil in a deep frying pan over medium heat. Test the oil by dropping a small piece of dough; if it rises to the surface quickly, the oil is ready.
  2. Press the dough directly into the hot oil in a circular motion, creating thin strands. Avoid overcrowding the pan.
  3. Fry until the karasev turns golden brown and crispy, flipping occasionally for even cooking.
  4. Remove with a slotted spoon and drain on paper towels to remove excess oil.

4. Cool and Store

  1. Once the karasev cools completely, break it into smaller pieces if needed.
  2. Store in an airtight container to retain freshness and crispness for several weeks.

Tips for Perfect Karasev

  • Adjust the chili and pepper quantities to suit your spice preference.
  • Ensure the oil is not too hot, as this can cause uneven cooking.
  • You can add a pinch of asafoetida (hing) for an extra flavor kick.
