Poori with Potato Masala

Poori with Potato masala.. not intented to post in profile, but wanted to with few fond memories associated with the dish. Growing up, my mom made poori with a variety of side dishes just like that, on any day she wanted. However my neighbors always made them only on holidays. I have always wondered and asked their kids why always on Sundays. Later one neighbor aunt told it takes lot of time to make the dough, shape and fry them, not so convenient during weekdays. I could never relate that because my mom often made them.
BUT, when I started cooking on my own, after marriage in my kitchen, the very confident me, made the dough in the food processor and sat down to roll the dough into poori. Failure after failure, I just couldn’t do it and it took me about an hour to roll, cut the round shape for just 8 poori. My husband waited patiently(He is just like this always even now, never complains no matter what and how I cook). A simple poori breakfast took me about 2 hours from start to end. I was very frustrated. Nevertheless I kept trying, improved but still takes time.
After a couple years, I got myself a roti maker. I use that to make phulkas mostly, but I also use to roll the poori. Just make the dough of whole wheat flour, salt, a few drops of oil and water in the stand mixer or food processor. Switch on the Roti Maker to preheat while I portion the dough in the small lime sized balls. Then flatten using the roti maker, keep aside to be fried. Just like that, all under 15 minutes from flour to plate.

I make them often too still my mom is very quicker all done manually. Good times remembering poori breakfast days.
**And my 80 rupees, string bracelet is still strong after 3 months and happy to have purchased from a street vendor in Parrys Corner.
