Healthy Almond Apple Snack Cake
A soft and delicious Healthy Almond Apple Snack Cake that is easy to bake and is perfect for breakfast or just snacking.
Breakfast bread, Healthy Snacks, Snacks
Mixing bowl/Food processor
Grater for apples
I used light olive oil
Soft Brown Sugar
or Maple Syrup
at Room temperature
or simple thick yogurt
1 1/2 Cups
Gluten free Mix will work.
Apples[Any variety will work]
Peel, core and grate.
Preheat the oven at 180 degrees Celsius
Add the ground cinnamon to the grated apples and set aside
In a large mixing bowl or in the food processor bowl add the oil, brown sugar, honey, yogurt, eggs, vanilla extract. Whisk/process well.
Add the flour, almond meal, baking powder, baking soda and salt. Mix just until combined. The batter will be super fluffy.
Fold in the cinnamon stewed apples carefully with a silicon spatula.
Bake in a spring form pan of choice. I use mini cake pans.
Sprinkle the almonds on top if using.
Bake at 180 degrees Celsius for 45-50 minutes until the cake is baked.
Cool on a rack and serve.
Grate or cut the apples as per convenience
Use any vegetable oil of choice
Same for flour - use AP or GF mix. All will work
