Simple Classic Linzer cookies
Recipe of the simple classic linzer cookies made with real almonds and sandwiched with jam of your choice - strawberry jam in my photos.

Linzer cookie cutter [or]
Large cookie cutter and a smaller cutter
Unsalter Butter - 1 Cup
Sugar - 1 Cup
Almonds - 1/2 cup
Flour - 1 1/2 cup
Egg - 1
Vanilla or Almond extract- 1/2 tsp
Salt - a good pinch
**For the filling**
Jam of choice
I mostly use strawberry jam
Icing Sugar - For dusting the cookies
In a food processor bowl, process the sugar and the almonds.
Once powdered, add the butter and process until creamy.
Add the egg and run the processor again.
Add the flour, salt and vanilla extract.
Process until the mixture forms a soft ball.
Now to roll, you place two non-stick papers with quarter of the dough and roll to about 1/2 cm thick circle. No mess with additional flour or dusty countertop.
Use the cutter, and cut out the cookies.
Use the remaining dough and repeat the steps 6 and 7.
Now chill the cut cookies.
When you are ready to bake, preheat the oven at 180 degrees Celcius. And cut out exactly half the cookies with smaller shapes you desire so they can be your top halves.
Bake for 12 -15 minutes. Let them cool.
Once cooled, dust the top halves with icing sugar and keep aside.
On the bottom halves, place a teaspoon of jam in each if the cookie and sandwich softly with the dusted top halves.
