Breakfast Bread Scramble || Bread Egg Upma
A super simple and delicious eggs and bread scramble with vegetables, spices and optionally cheese that is totally filling and perfect for breakfast.
Tear/cut into chunks, toast if required optionally.
Fresh Coriander Leaves
Red Chilli Powder
I use Olive oil
Toast the bread if you like crunchy scramble. Skip this step if not needed.
Keep the bread chunks in a bowl.
In a bowl add the eggs, onion, coriander leaves, salt, pepper, turmeric and red chilli powder. Whisk well.
Pour the mixture on the bread chunks and mix well. Let the egg and bread mix sit for 5-10 minutes.
In a pan, heat oil. Add the egg and bread mix and cook on high flame for 2-3 minutes until the eggs are cooked and the bread chunks looks coated with eggs.
Sprinkle coriander leaves, lemon if needed.
Serve HOT with ketchup.
Lemon juice is optional.
Use finely grated carrots or beetroot if you like along with onions.
Cook just until the eggs are set and cooked.
