Ingredients
Filling
Apples - peeled
cored and sliced or cubed - 4
Blackberries- 100g
Cranberries - 50g
Sugar - 50g
Cornstarch- 2tbsp
Salt - 1/2 tsp
Lemon Juice - 2tsp
Biscuits
All purpose flour - 100g
Sugar - 30g
Frozen and sliced
coconut oil - 50g
Baking powder - 3/4 tsp
Salt - 1/2 tsp
Cold Almond milk - 3tsp
Instructions
Add all the ingredients of the filling in your baking dish, mix well and keep aside.
In a mixing bowl combine the flour, sugar, baking powder,salt. Mix well
Add the frozen coconut oil,cube like butter if you would and make a crumbly mixture.
Add almond milk slowly, you may not need all 3tsp if it, so carefully mix just until the dough come together.
Dump the dough onto a large parchment paper. Fold in and out laminating the dough. This step is optional. But for a flaky pastry, try it
Pat the dough and cutout the Biscuits in your favorite shape.
Arrange the cutout Biscuits on top of the fruit filling. Sprinkle some sugar on top the Biscuits.
Chill in the freezer while you preheat the oven at 180°C.
Bake for 45 to 50 minutes until the fruit is bubbling and the Biscuits are golden in color.
Enjoy with vanilla ice cream
