Leftover Vegetable Curry Puff
.. Veg puff is my favorite snack whenever I go for movies in theatre.. yeah in the minority among people who love popcorn, but I love the crispy puff with loads of vegetables stuffed inside more than any other snack. These puffs here are made of loads of vegetables that are from a curry I made as meal. Yep.. from leftover homemade curry, homemade rough puff pastry, some bread crumbs to thicken the curry, egg wash and bake. Very very simple, since all the ingredients are known and kind of homemade I want to consider these puff healthier when compared to the store bought ones.

Ingredients
Puff pastry sheet – 1 (homemade or store bought, thawed)
Curry – as needed or left over
Bread crumbs – needed to thicken the curry
Egg – 1, beaten
Sesame seeds, poppy seeds – optional

Method
1. Roll the pastry into a rectangle
2. Add the curry and the bread crumbs in a bowl to make a thick filling
3. Place the filling on to the rolled pastry sheet
4. Roll the pastry sheet carefully
5. Cut into smaller pieces, rolled side facing you,if you like or bake as a roll and slice after baking
6. Brush with a beaten egg on the top
7. Sprinkle the sesame and poppy seeds on the top
8. Bake at 200°C for 20 to 25 minutes until golden brown
9. Serve with a dipping sauce of choice
