Holidays, vacationing etc., has kept me busy from blogging. I am cooking and baking though, if you ask did I have time for it. Yes, Yes, I dont stop cooking and baking even if I am unwell.
Holidays and baking, for many is totally associated. Many bake their favourites during the holidays and me, I get a lot of inspiration to cook in the holidays as well. As for my version, it is a bit different. Almonds are easier to source than Pecans in Chennai. So today’s recipe is my Easy Almond Strawberry Linzer cookies.
Easy, because you do not have to use a stand mixer, prepare almond meal etc.,
If you have a food processor, you can very well use whole almonds with a chopper blade, instead of the kneading blade. All at one go.
Another point here, you will need the linzer cookies cutters. If you cannot get your hands on them, no problem. Use a smaller pipetip or any small cutter for your larger cookies.
The ingredients are as below –
1. Butter – 1 Cup
2. Sugar – 1 Cup
3. Almonds – 1/2 cup
4. Flour – 1 1/2 cup
5. Egg – 1
6. Baking Soda – 1/2 tsp
7. Vanilla or Almond esscence – Few drops
8. Salt – a good pinch
For the filling
1. Strawberry Jam – Seedless if you can get.
2. Icing Sugar – For dusting the cookies
1. In a food processor bowl, process the sugar and the almonds.
2. Once powdered, add the butter and process until creamy.
3. Add the egg and run the processor again.
4. Add the flour, salt, baking soda and vanilla essence.
5. Process until the mixture forms a soft ball.
6. Now to roll, you place two non-stick papers with quarter of the dough and roll to about 1/2 cm thick circle. No mess with additional flour or dusty countertop.
7. Use the cutter, and cut out the cookies.
8. Use the remaining dough and repeat the steps 6 and 7.
9. Now chill the cut cookies.
10. When you are ready to bake, preheat the oven at 180 degrees Celcius. And cut out exactly half the cookies with shapes you desire so they can be your top halves.
11. Bake for 12 -15 minutes. Let them cool.
12. Once cooled, dust the top halves with icing sugar and keep aside.
13. On the bottom halves, place a teaspoon of jam in each if the cookie and sandwich softly with the dusted top halves.
There you have them, the easy Linzer Almond Strawberry cookies.
Variation – add a teaspoon of cocoa powder in your dough while adding flour for chocolate almond cookies.
